Varieties of cultivated grapes
Bobal
Red variety originating in the region of Utiel-Requena. It is a variety of great resistance, that sprout later than other red varieties, what is the best to protect against the risk of spring frosts.
The plant presents a medium-high vigor and its vine shoot are semi-upright. The adult vine leaf is big, dark green and maté and quite fibrous.
The cluster is medium in size and irregular, round grain and compact.
Due to the wide variety of anthocyans that has the grapes, wines have developed with intense color characteristic. It offers red wines of complex flavors. If it is grown properly, we can obtain wines suitable for aging.
In addition this variety is ideal for the development of red wines with a carbonic maceration, as well as rosés, with its unique tonalities. The skin of bobal has a high content in resveratrol, a substance good for the heart and anticancerigenic.
Tempranillo
It is the second variety in implementation. They have greatly increased their plantations from 1987, with successive restructuring plans of vineyards.
The vineyards are vigorous, which look semi-upright. The average cluster is compact, small grain and dark in colour.
It is sensitive to the powdery mildew. The wines are of high quality, balanced and aromatic, good acidity and graduation. It has little colour though it is quite stable. It has a moderate fruiting acidity, aromatic and excellent for aging in casks.
Macabeo
White grape variety, which is upright.
The plant sprout quite late, the clusters are big. The berries are small and to golden yellow.
Its wine is very resistant to oxidation and it provides very clear wines with fruity flavor and acidity fixed strong.
Cabernet Sauvignon
Red variety with a great ability to adapt to all kinds of climates. Its cluster is loose, compact and bluish black. Its grapes are small, thick skin. With a late maturity, ideal for temperate zones.
Produces a wine with marked acidity and presence of tannins. Has intense colors and aromas to truffles, coffee... It is often benefited if it has been aging several years.
